1- Paella

One of the best known Spanish dishes, paella has its roots in Valencia. Originally, paella was cooked in huge outdoor cauldrons and saw its popularity increase around the mid 1800s. Traditional Valencian paella includes chicken, rabbit and local white beans called garrafó, but seafood and "mixed" paella, which contains both meat and fish, are also famous.

2- Fideuà 

This dish was born as a humble dish typical of fishermen. To the spaghetti are added seafood such as monkfish, squid, shrimps and more. One of the most famous and typical dishes of Valencia.

3- Bunyols

Bunyol are delicious pancakes that contain a touch of pumpkin in the dough. The Valencians usually eat them during the famous Las Fallas festival in March, but you can enjoy them at any time of the year.
 

4- Arròs a banda 

This typical Valencian food should not be confused with paella. In fact, this dish originated in nearby Alicante, where fishermen used their unsold fish to prepare the broth used to cook rice. Rice and seafood are traditionally served separately in this dish: first comes the fish, then the rice is served as a main course and seasoned with a pinch of garlic mayonnaise.
