Toulouse and the region of Occitania in France have a reputation for having a wide variety of traditional dishes. Here are some to try!
 

1- Cassoulet

It would be sacrilege to go to Toulouse and not try cassoulet. This bean stew is undoubtedly the most emblematic dish of the city, and comes in a variety of recipes. Although the most famous recipe consists of beans and cold cuts, the cassoulet of Toulouse contains beans and duck, although you can replace the duck with sausage.

2- Saucisse de Toulouse

The "Saucisse de Toulouse" (sausage of Toulouse) requires a rather rigorous process. It is made mostly of lean meat, is medium in size, and is recognizable by its pink, slightly reddish color. Although it is mainly served with cassoulet, there are other ways to try it, such as with roasted potatoes or fries, or as braised sausage with vegetables: it is simply delicious.

3- Goose foie gras

While Occitania is famous for its duck foie gras, if you are in Toulouse you should try some goose liver. Goose liver is very popular, but goose foie gras is becoming increasingly popular in France and abroad for its taste, which is more delicate than duck foie gras.
 

4- Canard confit

Although in many parts of France you can find a fair confit of duck, Toulouse and its surroundings are the place where you can enjoy one of the most refined dishes of France. In the traditional recipe, all parts of the duck are used and salted before being cooked in meat fat to get that fantastic taste and tender texture.
