Dishes to try in Toulon

The Provencal soil surrounding Toulon provides the city with fresh produce to enjoy and the temperate climate is also perfect for wines. Here are some dishes to try in Toulon!

1- Tartiflette

Tartiflette is a famous dish originating in the French Alps and is normally served during the winter. Tartiflette does not contain many ingredients and is quite simple and tasty. Potatoes, onions, bacon and soft cheese are all you need: the potatoes are fried with onions and bacon in a pan, after which white wine is poured on top and everything is reduced. The cheese is cut in half and put on top of the ingredients so that it can melt on the plate while it is in the oven.

2- Fougasse

Provence's response to Italian focaccia, fougasse is a bread focaccia typically filled with olives and herbs from Provence (and occasionally other additions such as cheese or anchovies), just like its Italian counterpart.

3- Candied fruit

Toulon
Throughout history, connoisseurs have explored ways to preserve fruit during the winter and these preserves have also become popular in Italy. Provence is the perfect backdrop for growing all kinds of fruit. Many fruits can be candied, but the most popular are oranges and tangerines, pears, figs and cherries. You will also find candied orange peels and lemons. While they are delicious as snacks, they are also used to decorate cakes and pastries.

4- Bouillabaisse

Bouillabaisse is one of the most traditional dishes of Provence and an absolute must if you visit the region. Originally from Marseille, bouillabaisse is a delicious fish and seafood stew. Bouillabaisse broth is tomato-based and includes orange peel, fennel and saffron. The sliced fish is then added to the broth and left to simmer for a very long time.
