1- The Paris-Brest

 

This traditional pastry is represented in the form of a crown. It is composed of a choux pastry filled with a praline mousseline cream, sprinkled with slivered almonds. The story goes that the Paris-Brest was invented by a pastry chef from Maisons-Laffitte, Louis Durand, near Paris, as a tribute to the famous bicycle race that was in its early days. You will find it in bakeries and pastry shops in small or large sizes. 

2- Opera

Opera is a pastry made of a succession of Mona Lisa biscuits, chocolate ganache and coffee butter cream. Created in 1955 by the Maison Dalloyau and named by the pastry chef's wife "Opéra" for its similarities with the Opera stage or as a tribute to the dancers who used to come to the shop.

You will find this cake in bakeries and pastry shops in small or large format. 
 

3- The croque-Monsieur

 

The croque-monsieur is a hot sandwich composed of toasted sandwich bread, white ham and cheese au gratin. When layered with an egg, it is called "croque-madame".

It is said to have first been offered for the first time in 1910 on the menu of a Parisian café on the famous Boulevard des Capucines. It is served in almost all Parisian brasseries.

4- Le Hachis parmentier

 

It is a dish made of mashed potatoes mixed with ground beef. This gratin owes its name to the apothecary, Antoine Parmentier. He would have proposed it to Louis XVI to fight the famine.
