Ossobuco is the transversely cut veal shank that is simmered for hours in a rich broth of red wine and an assortment of vegetables. The meat is often served over polenta or risotto, and garnished with a mixture of finely chopped parsley, lemon zest and garlic called "gremolata". Many believe that the best part is the soft, flavorful bone marrow in the center of the bone, which can be extracted with a butter knife and spread on bread.

Cassoeula is traditionally a Milanese country dish made with leftover pork after the cuts of choice have been eliminated. Nothing is wasted and all the pieces of pork are cooked with wine and onions, carrots and celery for hours to make everything tender.

In addition to rice, the other staple food in the Milanese diet is corn, which is processed into corn flour and used to make polenta. Polenta dates back to ancient Rome, and can be cooked in many ways. In Milan, it is often the base underneath meat dishes, but it can also be flavoured like risotto or seasoned with cheese and butter, becoming a real unique dish.

Perhaps the most classic of Milanese dishes, risotto alla milanese elevates a simple rice dish with one of the most regal ingredients: saffron. The result is a creamy risotto, golden in color and with the characteristic flavor of saffron. Simple though it is, it is a dish with a delicate flavor.
