2- Tripe Cagliaritan style

Trippa alla Cagliaritana is a traditional Italian dish from Sardinia. This stew is made with pork tripe, onions, tomatoes, mint and Sardinian saffron. Many believe that the best saffron comes from Sardinia, where it has grown spontaneously for a long time. To prepare the dish, the ingredients are simply boiled together, while saffron is added at the end of cooking. Before being served, tripe alla Cagliaritan style is garnished with mint leaves and seasoned with grated pecorino cheese.

4- Burrida

Burrida is a Sardinian technique to serve fish such as skate, smooth dogfish, bloodhound shark or dogfish (or any other firm fleshy fish). The fish is sliced and simmered in a broth flavoured with celery, carrot, onion and lemon. Then, for the Cagliari version, the fish is seasoned with a sauce consisting of garlic cooked in olive oil, walnuts or pine nuts, parsley and vinegar.
