Dishes to try in Bordeaux

1- Oysters

The Nouvelle Aquitaine region is home to one of the seven French oyster-growing areas: Arcachon. The Arcachon basin has about 350 oyster farmers who produce 8000 - 10,000 tons of oysters per year. You will not find them sold in grocery stores, they are not exported and it is quite rare to find Arcachon oysters in restaurants outside the Nouvelle Aquitaine region.

2- Macaroons of Saint-Émilion

The remains of the convent of the order of the nun of Saint Ursula remind us that the nuns had settled in Saint-Émilion in 1620, where they made this traditional recipe. A tradition of Saint-Émilion for over 400 years, macarons go perfectly with a glass of Saint-Émilion wine or Crémant de Bordeaux.

3- Canelé

The most beloved Bordeaux sweet is the canelé. Canele are flavoured with vanilla and rum, and the perfect canelé has a soft center and custard, while the outside is caramelised until dark. The name canelé comes from the grooved copper moulds in which the pastries are baked.
 

4- Boeuf de Bazas

Bazas beef, or Boeuf de Bazas, is renowned for its tenderness and flavor. The beef comes from an ancient breed of cow known as Bazadaise, which is bred around the town of Bazas, near Bordeaux. Only 13 butchers are allowed to age and sell Bazadaise meat. It is not sold in supermarkets and it is rare to find the boeuf de Bazas outside the region. So when you see it on the menu, order it!
