Mojo sauce is the unofficial condiment of the Canary Islands and is combined with practically everything, including the famous papas arrugadas (wrinkled potatoes), a very popular dish in the Canaries. There are different versions of mojo sauce, but the two most common types are mojo rojo rojo (made with red pepper and garlic) and mojo verde (made with coriander and parsley).
2- Sancocho Canario
Sancocho Canario is a type of fish dish that is commonly eaten on Good Friday. Sancocho usually means stew, especially in Latin America. But in the Canary Islands the dish is presented without much sauce. To prepare this dish, preserved and salted fish is used - after soaking it for 24 hours, the fish is boiled with potatoes gently and served with your favorite mojo sauce.
