Dishes to enjoy in Fort de France

Martinique is generally known for having a good cuisine being a mix of French, Caribbean, Indian and even American culinary traditions. You can't leave without tasting some of the local dishes!
 

1- Langouste Grillée

The species of lobster that lives at the bottom of the waters of Martinique and the rest of the Caribbean is the spiny lobster. It is often split in half, grilled, and seasoned with chien- a condiment whose ingredients include chives, onions, peppers and lime juice.

2- Crabes Farcis

The stuffed crab is served in a shell filled with crab meat mixed with milk, lard, breadcrumbs, chilli pepper and green onions, a mix of exotic flavours.

3- Lambi

Lambi is one of the most flexible ingredients in Martinique. You can find it in ravioli and fricassee or even crepes. This marine animal resembles octopus in texture and flavor, and is well suited to Martinique's citrus and tomato-rich cuisine.
 

4- Poulet boucané

The poulet boucané is the result of a long work: the cook will first marinate the chicken on the bone in lemon or lime juice, garlic and shallot for several hours, or even during the night; only then the chicken will be put on the barbecue fire. Finally, the chef covers the crunchy skin of the poulet boucané with chien sauce, the result is a chicken with a unique taste!
