The animals feed mainly on local chestnuts and acorns for at least the first 30 days, after which the diet is supplemented with barley. Jambon sec de Corse is matured for at least 12 months, acquiring its unique texture and flavour.

4- Cap Corse

This legendary Corsican aperitif has a history dating back to 1872, when it was developed by Louis-Napoléon Mattei who, in order to fight the malaria epidemic, thought of mixing local muscatel wine with quinquina or quinine, a medicinal plant known for its anti-malarial properties. It is flavoured with oranges and other aromatic plants, while aging in oak barrels contributes to its unparalleled sweet and sour taste that improves with age.
