4- Bebek Betutu
The bebek betutu (Balinese smoked duck), is one of the most famous traditional dishes of the Island of the Gods. Its preparation is a kind of ritual that involves several steps and lasts for hours! The outside of the duck is rubbed and massaged with a mixture of roots, herbs, spices and vegetables - the duck is then stuffed with the rest of the mixture and wrapped in banana or bamboo leaves, coconut bark or in the shell of a palm branch. It is then buried and cooked in the ground very slowly and thoroughly for a period of three to eight hours. It becomes so tender that it melts in your mouth!
